A Summer Inspired Strawberry Rosé Mojito

It may be June, and raining, but you’d never know it here because today we’re sipping mojitos and pretending it’s all sun, sunny, sunshine!

I love a good mojito, and so does the rest of the team. It’s a classic cocktail that pretty much goes hand in hand with summer. It’s fresh and tropical and delivers the right amount of booze in each sip.

Typically, a mojito is made with mint, lime, sugar, and a good hit of rum. It’s delish. Whilst you simply can’t beat a classic, ordering the old faithful mojito can feel a little predictable at times. So I thought, let’s give it a new twist–an injection of wine and a fruity hit makes it that little bit lighter. Without taking a hit on the booze.

I love creating and mixing up new cocktails, especially in the summertime. Summer weddings feel like an endless party here. Once the formalities are taken care of, and the tunes pump through the Bose speakers, there’s always a festival-like feeling in the air.

Guests linger longer outside on the lawns sipping drinks, and gin and tonics, spritzers, and mojitos fill the drinks tables. Meaning, we behind the bar, also enjoy the summer wedding vibes as we mix drinks and shake cocktails to the beat of the Ibiza tunes.

Seeing as tomorrow is one of my favourite days, National Rosé Day (although I’m quite keen to celebrate it every day of the week!), I couldn’t think of a better excuse than to open a bottle of pink wine and create this summer-inspired Strawberry Rosé Mojito.

Now let me say this – rosé wine is not just for your aunt in the flowery blouse who enjoys one too many ice cubes in her wine glass. Nope, not anymore. Rosé is having a resurgence. The pink stuff is light and crisp and fun, and definitely, summer approved.

This cocktail is all about the summer mojito vibes, so for those of you following along at home, here’s my new Strawberry Rosé Mojito.

Summer Inspired Strawberry Rosé Mojito  

You’ll need: 
  • A handful of raspberries
  • A handful of strawberries, roughly chopped with one saved for the garnish
  • A good squeeze of lime
  • 1 teaspoon of sugar
  • 125ml of your favourite rosé (I used Pasquiers Grenache Cinsault Rosé)
  • A handful of fresh mint leaves
  • Soda of your preferred choice
  • Chunky ice cubes
How to mix your own cocktail:
  1. In your cocktail glass (I used an old fashion style glass), muddle the fruit, lime, and sugar together. Use more or less, to taste.
  2. Crush some mint leaves in your hand (so as just to lightly “bruise” the leaves), and add it to your fruit mixture. Stir using your cocktail stirrer.
  3. If you’re feeling fancy, you can rim the glass with the lime and sugar, and also spread a raspberry around the sides of the glass to give it colour and a good coating of flavour throughout.
  4. Add a couple large chunky ice cubes to your glass.
  5. Next, pour your rosé over the top of the mixture.
  6. Top with your choice of soda, and stir again.
  7. Garnish with some mint springs, and a strawberry and toast the summer!

So go on, pour yourself a glass and sip your way into summer.
